22 April 2024Kolymbari S.A. is located in Kolymbari, a picturesque seaside town in the northwest of Crete. It is a family business founded in 1980 and has as its object the production and standardization of exclusively extra virgin olive oil, olive oil of Protected Designation of Origin (PDO) Kolymvari Chania Crete and Protected Geographical Indication (PGI) Chania Crete, as well as organic olive oil. The olive oil KOLYBARI S.A. is produced from olives of the fine variety “Koroneiki” which are harvested from the age-old olive groves of the Kolymbari area.
The challenge
The oil production process is particularly complex, and organic oil in particular requires strict quality controls. At each stage of the production process, there is a need to record data on raw materials and production parameters. Recording by analog methods, such as production forms, is a time-consuming process and increases the possibility of errors, as well as the cost and time of production.



The solution
Initially, in cooperation with the company, the production process was redesigned and the points to be digitized were identified. Then, through a flexible analysis, implementation, and testing plan, an integrated production process support system based on Soft1 ERP, Azure infrastructure, and android applications for mobile terminals and IoT (Internet of Things) devices was created.
Soft1 ERP is used as the central structure where all the production information is gathered. Specifically, the cooperating mills, producers, storage tanks, transport tanks (cubitaner), quality analysis samples, analysis results, production quantities, and the cost of the olive oil produced are recorded.
In each mill, the agronomists are equipped with a portable terminal and a portable printer. With the android application, which is connected to the Soft1 ERP in real-time, they record qualitative and quantitative indicators from the receipt of the olives to the dispatch of the cubitaner to the standardization plant. At the same time, sensors record the temperature at critical stages of production. Quality control is automated and ensured by a complete recording of sample taking. Each sample is labeled with production information and a barcode so that it can be easily identified during analysis in the chemist or during tasting.
At the standardization plant, the cubitaner is received and identified based on the labelling. The filtering and transfer of the olive oil to the storage tanks are then recorded. The production cycle ends with the recording of the extraction of olive oil from the tanks and its packaging.
For more efficient cooperation between the company and the chemical analysis laboratory, a web application was created, through which the samples are received and the results of the chemical analysis are automatically entered in Soft1 ERP.
The results
The integrated system helped the company Kolymbari SA to gather all production information in one place (Soft1 ERP) dramatically reducing data search time.
The implementation serves as a decision-making tool, helping the company to significantly improve the quality of olive oil and effectively evaluate its cooperation with mills and producers.
